Oatmeal Chocolate Chip Cookies

Jim dug out an old recipe of his mother’s the other day and WOW–they were a hit with the folks enjoying The Firelight Inn B&B during the weekend. The smell of fresh, warm cookies coming from the kitchen arose their senses and the cookie jar in the butler’s pantry was empty before we knew it. Here’s the recipe for Carolyn’s Oatmeal Chocolate Chip Cookies:

1 cup shortening
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 teaspoon vanilla
1 1/2 cup flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon hot water
1 cup nuts
1 package chocolate chips
2 cups oatmeal

Cream together shortening and sugars. Add eggs and vanilla. Mix dry ingredients together. Dissolve baking soda in hot water and add to the creamed mixture. Add flour mixture alternately with oatmeal. Add chips and nuts when mixed. Bake at 350 degrees for 12 minutes. Enjoy and get ready to make another batch!
