Firelight Inn Apple Date Scone Recipe


A new recipe for delicious Apple and Date Scones was enjoyed by Firelight Inn guests this past weekend. We don’t usually try new recipes on guests on a busy Saturday morning but Joy was feeling pretty confident about these, they turned out delicious and delighted our guests.

Apple and Date Scones
1 1/2 cups flour
2 Tablespoons packed brown sugar
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup butter, diced
1/2 cup oatmeal (quick-cooking)
1/2 cup apple, peeled and chopped small
1/2 cup chopped dates
1 egg, lightly beaten (use 2 if your eggs are small)
1/4 cup plus plus 2 teaspoons heavy cream
2 teaspoons coarse sugar

Preheat oven to 375 degrees. In a large bowl, combine flour, brown sugar, baking powder, cinnamon, and salt. Using a pastry blender, cut in butter until mixture is crumbly. Stir in oats, apple and dates. Stir in egg and cream. Form dough into ball. Turn dough onto a lightly floured surface; gently roll in flour to coat. Knead lightly with hands 10 times. Roll or pat dough to 1/2 inch thickness. Using a 2 inch round cuter, cut dough into rounds. Place on an ungreased baking sheet (I use a Silpat mat). Lightly sprinkle each scone with coarse sugar. Bake for 15-17 minutes or until golden brown. Let cool on pan 10 minutes. Makes about 16 scones.

Last Minute Firelight Inn Getaway for the July Holiday Weekend

It is said that Duluth is “good for you” this summer so if you don’t have plans for the upcoming holiday weekend, The Firelight Inn Duluth Bed and Breakfast will be really good for you and is where you should travel to!

How about a walk along the Lake Walk or the beach on Park Point? Check out the recent renovation completed on Enger Tower and take in the scenic overlook. There will be live music at Sir Benedicts Tavern on the Lake each evening. The Northern Prints Gallery presents their “New Works in 2011″ show that is sure to be amazing. Drive up the shore, stop and explore, sit by the lake, or relax at The Firelight Inn on Oregon Creek.

Suites are still available for the upcoming 4th of July holiday weekend. You can reserve Friday and Saturday or Saturday and Sunday for a two-night minimum weekend stay. The fireworks in Duluth on Monday evening at 10:10 p.m. are the best in the Northland!

Travel to Duluth MN and stop to smell the flowers at The Firelight Inn




We have planted gorgeous flowers at The Firelight Inn on Oregon Creek Bed and Breakfast this year and we want to share them with you as you travel to Duluth.

We have placed hanging pots on the second floor outdoor spiral staircase and on the front of the garage and on a front lawn hanging plant holder. There are pots of beautiful flowers on the front and back steps and second floor and back decks that are overflowing with color and aroma. Some of the what we have planted are marigolds, cosmos, King Tut grass, petunias, pansies, sedum, and wave petunias.

The perennial garden boasts bleeding hearts, phlox, lamb’s ear, Jacob’s ladder, peonies, oriental poppies, sedum, daisies, and Jim’s tomato plants. Joy is often found moving plants and removing weeds.
