The Magical Celebration Package at The Firelight Inn Duluth Bed and Breakfast


We prepared a Celebration Package for the couple checking into our Northwoods Suite last Friday. Chilled champagne with two souvenir champagne flutes and a fruit, cheese and cracker platter were awaiting the couple who arrived from Mankato for a weekend getaway at The Firelight Inn Duluth Bed and Breakfast. Thank you so much for everything. My boyfriend booked this weekend at The Firelight Inn because he knew I wanted to have a relaxing weekend together away from the hussle and bussle of school (for me) and work. We had been looking forward to the weekend away for months. This place could not be more perfect for the two of us. The Northwoods Suite is exactly what the two of us love about MN…the Outdoors/Up North feel.

I am very happy to announce that we are now ENGAGED! The Firelight Inn and Northwoods Suite will forever be our special place. He completely got me and I am still so shocked but we are both extremely happy. He ordered your “Celebration Package” and used this as his decoy. He asked me to take a look at it (because naturally I was so excited looking at everything and settling in for the weekend). He said, “I ordered this for us because we are celebrating. I love you and I want to marry you.” He got down on his knee and said ‘will you marry me?’ while pulling out the most beautiful ring from his pocket! After a moment or two of screaming and jumping around (while saying are you serious over and over) I said YES, OF COURSE!

This is everything we could hope for and more. We are so excited that this wonderful, relaxing, peaceful, historical and exquisite bed and breakfast has been a part of our next chapter together. We will definitely be coming back sooner than later and recommending to others.

Leap Day Blizzard and Duluth March Events from The Firelight Inn Bed and Breakfast

Greetings from The Firelight Inn Duluth Bed and Breakfast on this Leap Day Blizzard in Duluth Minnesota. We are watching the storm from the snow-covered windows and listening to the roar of the wind and on the Weather Channel we can see film clips of the huge waves coming off of Lake Superior. It would be fun to venture out to see the waves ourselves but the only traveling we will attempt today is to get to our friends’ wedding in Proctor at 5 p.m. We hear snow plows not far away but our street is really impassable at this point. After such a wimpy winter so far, today has really put us back in the survivor mode of boots, scarves, shovels and lots of courage!

We are sharing some events that will be happening in March in Duluth and at The Firelight Inn on Oregon Creek Bed and Breakfast. By the end of the month, most of the suites will get brand new decor and carpeting. Deep and rich shades of red, brown, egg plant and blue carpet will be installed and will be ready for guests to sink their feet into! A major renovation will happen in the Barnum Suite with all new shades of gold and brown in a new love seat, linens and curtains and furnishings.

Travel to Duluth Minnesota in March and enjoy skiing, snow shoeing and outdoor activities and then relax with a bubble bath and firelight at The Firelight Inn. During the first 14 days in March, many downtown Duluth restaurants will offer multi course fixed priced menus as they participate in the Eat Downtown Duluth Restaurant week. This is a great opportunity to try out some new menus!
Change of Pace Productions present “Murderous Crossing” dinner shows held at the Fitger’s Complex on Friday, Saturday and Sundays in March. This is an audience participation murder mystery and the year is 1923. Audience members are passengers on board the HMS Victoria as it crosses the English Channel. This promises to be a great dinner show and for more information, schedule, prices and reservations visit changeofpaceproductions.

On March 9th at the Mitchell Auditorium at the College of St. Scholastica you may enjoy an evening of fantastic Scottish and Irish Music and Dance.

March 15-17 is Fitger’s Bock Fest. This free event held at Fitger’s Courtyard features eating contests, beer drinking contests, a beer tent and more and is not to be missed!

The Duluth Playhouse presents “Les Miserables”. This junior version of the Broadway Musical is based on the novel by Victor Hugo and tells the story of Jean Valjean who is transformed from a petty thief to an honorable mayor and loving father.

Celebrate St. Patrick’s Day at the Greysolon Ballroom with the Dueling Pianos! Doors open at 7 p.m. and the awesome show begins at 8 p.m.

March 30th is the annual Taste at Fitger’s which features the area’s finest chefs, sampling of wine, a silent auction and more to benefit the Second Harvest Northern Lake Food Bank.

A Wedding Today at The Firelight Inn Duluth Bed and Breakfast


The Firelight Inn on Oregon Creek Bed and Breakfast was the site of Dan and Kris’ wedding today in Duluth MN. A local Duluth Judge performed the intimate wedding by the fireplace and as Innkeepers we were proud and happy to be the witnesses to their marriage.

Dan and Kris are planning to tour the historic Glensheen Mansion this afternoon and then have a delicious dinner later today at Blackwoods on the Lake Restaurant. They will return to The Firelight Inn and enjoy two hours of relaxation massage therapy this evening. Just a walk down the hall for them to enjoy massage and relax after their exciting day! We wish them many happy years of married life together and look forward to them returning for their anniversaries at The Firelight Inn Bed and Breakfast.

Firelight Inn Christmas Brunch Recipes

We were honored to serve a Christmas Brunch to Duluth Regional Vineyard pastors, staff and volunteers yesterday and we are sharing recipes so that you can enjoy a Christmas brunch with your family and friends this holiday season. Many thanks to Joy’s “Thursday Girls” for all their help in the kitchen and serving all the delicious food.

The menu was Apple Crisp French Toast with Maple Syrup, Ham and Cheddar Strata, Fresh Fruit with Orange Honey Yogurt Sauce and Morning Glory Muffins.

Apple Crisp French Toast
Spray a 9 x 13 cake plan with Pam. Cut about one half of a loaf of white bread into cubes, crust off (about 6 cups) and put in bottom of sprayed pan. Spread 1 can of apple pie filling and 1 cup of rinsed and drained dark sweet cherries (cut in thirds), over the bread. Place 12 slices of French breach sliced 1/2 inch thick over the filling–just so it fits–it doesn’t have to be pretty!

Beat 7 eggs with 1 1/2 cups milk and 1 1/2 cups Half and Half. Pour that mixture over the bread.

Melt 1 stick of butter and add 1/2 cup flour, 1 cup brown sugar, 1/2 teaspoon Cinnamon and 2 cups regular oatmeal. Spread that mixture over the top of the french toast. Cover and refrigerate overnight. Preheat oven to 350 degrees. Bake the french toast covered with tin foil for about 45 minutes and uncovered for about another 15 minutes. Drizzle with maple syrup to taste and enjoy!

Ham and Cheddar Strata
6 medium sized Russet potatoes, peeled and slices 1/8 inch thick
4 large eggs
2 cups heavy whipping cream
2 cups shredded cheddar cheese
2 cups thinly sliced ham
salt and pepper to taste

Preheat oven to 350 degrees. Whisk the eggs with the cream in a bowl and set aside. Have shredded cheese and ham ready to go. Slice the potatoes with a slicer or mandolin so that they are consistent in thickness so that they cook evenly.

Spray a 9 x 13 cake pan with Pam. Cover the bottom with a layer of potatoes, overlapping slightly or shingling. Add a layer of ham and a layer of cheese. Repeat these steps until the pan is full, finishing with a ham and cheese layer on top. Pour the egg and cream mixture over the top and tap the pan lightly to settle the liquid.

Cover with foil and bake for an hour and 45 minutes total uncovering the pan for the last 15 minutes or so to brown. The strata is cooked when a fork poked in the middle has no resistance. Slice into squares and serve!

Morning Glory Muffins
2 1/4 cups flour
1 1/4 cup sugar
1 tablespoon cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 cups grated carrots
1 apple, shredded
1/2 cup shredded coconut
1/2 cup raisins
1/2 cup pecans
1 8 ounce can crushed pineapple, drained
3 eggs
1 cup vegetable oil
1 teaspoon vanilla extract

Preheat oven to 350 degrees. Grease 16 muffins cups. Mix flour, sugar, cinnamon, baking soda and salt into large bowl and stir in the carrots, apple, coconut, raisins, nuts and pineapple.

In a separate bowl, whisk the eggs together with the oil and vanilla. Pour this mixture into the bowl with the dry ingredients and blend well.

Spoon the batter into the prepared muffin cups, filling them almost to the top. Bake until a toothpick inserted into the center comes out clean about 35 minutes. Cool muffins in the pan about 10 minutes then turn out onto a wire rack to finish cooling. When cool, store in an airtight container. They are best when allowed to “ripen” for 24 hours before serving and they freeze very well. Makes 16 muffins.

Fresh Fruit with Orange-Honey Yogurt Sauce
Pineapple, cantaloupe, honeydew, kiwi, strawberries, grapefruit

Cut up all the fresh fruit into bite site pieces and section grapefruit and cut sections in smaller pieces.

For the yogurt sauce combine a 8 ounce container of vanilla yogurt, 1 tablespoon honey, 1/2 teaspoon (or more) shredded orange peel and 1/4 teaspoon vanilla. Transfer sauce into a serving bowl and chill at least 30 minutes. Drizzle sauce over the fresh fruit and garnish with a fresh mint sprig and enjoy!

The Firelight Inn on Oregon Creek is participating in the Historic Bed and Breakfast Inns of Duluth Holiday Tour this coming Sunday, December 11, 2011 from 1-5 p.m. Each Inn is dressed in their holiday attire and there will be food and refreshments at each historic home. Tickets are $25 in advance or $30 at the door on the Sunday. A portion of the proceeds will be donated to the Second Harvest Northern Lakes Food Bank.

Redboat Fine Art and Crafts Sale in Duluth MN November 3-5, 2011


If you’re looking for some beautiful homemade gifts this year, you need search no farther. Travel to Duluth MN for the Red Boat sale!

Firelight Inn Bed and Breakfast Recipe Featured at University of Georgia Event


Double Orange Scones from The Firelight Inn on Oregon Creek Bed and Breakfast in Duluth MN were featured on the menu of a special event at The University of Georgia. We were contacted by the Food Services Department at The University of Georgia requesting that we submit a recipe for their 2nd Annual Event “A Sunset Breakfast — Dawn Inspired Dishes Served at Dusk”. We submitted our recipe for Glazed Double Orange Scones which is a favorite of our guests at The Firelight Inn.

The focus of the special event on October 13, 2011 was to give students at the University of Georgia the dining experience of breakfast at Bed and Breakfast establishments from across the United States. The full menu featured 21 recipes from prominent Bed and Breakfast locations and was served to 8,700 hungry students in four dining commons.

Some of the other breakfast items that were included in this special sunset breakfast are Pumpkin Pancakes from the 1882 Aleksander House Bed and Breakfast in Louisville, KY, Gruyere Bacon and Ham Strata from the Korner Kottage in Suttons Bay, MI, Pineapple Zucchini Bread from Runnymede Country Inn in Fredericksburg, TX and Minted Fruit Salad from Amado Territory Inn from Amado, AZ. We’ve included a picture of the full menu!

The University of Georgia in Athens, Georgia received the Loyal E. Horton Menu Award from the National Association of College and University Food Services competing against more than 600 other institutions. Visit them online at www.uga.edu/foodservice.

The Firelight Inn’s recipe for Glazed Double Orange Scones was adapted for use by the University of Georgia’s chefs and food production teams in order to serve it to 8700 students. We thought it might interest you to see how much was required to feed the 8700 students.

For the scones:
576 lbs. and 6 oz. of flour
89 lbs. and 4 oz. of granulated sugar
21 lbs. and 3 oz. of baking powder
11 lbs. and 4 oz. of orange rind
271 lbs. and 14 oz. of butter
254 lbs. and 14 oz. of mandarin oranges (chopped)
118 lbs. and 15 oz. (2+ cases!) eggs
33 gallons, 3 quarts and 3 cups milk

For the glaze:
9 lbs. and 14 oz. of granulated sugar
271 lbs. and 14 oz. more butter!
101 lbs. and 9 oz. of orange marmalade
16 gallons, 3 quarts and 3 cups of Grand Marnier
248 lb. and 7 oz. powdered sugar

We find these amounts amazing, don’t you? We are very proud to be included in this special breakfast event and will cherish the beautiful plate we received today from the University of Georgia which is pictured above.
