Banana Nut Pound Cake Recipe from The Firelight Inn on Oregon Creek Bed and Breakfast

Warm Banana Nut Breakfast Cake served at The Firelight Inn on Oregon Creek Bed and Breakfast

Warm Banana Nut Breakfast Cake served at The Firelight Inn on Oregon Creek Bed and Breakfast

Innkeeper Joy was looking for a recipe that was something different than traditional banana bread and found this great recipe for a moist breakfast cake.  She recently served it to weekend guests at The Firelight Inn on Oregon Creek Bed and Breakfast and there was hardly a crumb left!

Banana Nut Breakfast Pound Cake

3 1/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 8 ounce package of cream cheese, softened
1/2 cup butter, softened
3 cups sugar
4 eggs
2 medium bananas, mashed (about 1 cup)
1/4 cup milk (I used 1%)
1 tablespoon vanilla
1 cup chopped pecans
powdered sugar

Preheat oven to 350 degrees.  Grease and flour a 10-inch fluted tube pan and set aside.  Combine flour, baking powder and 1/2 teaspoon salt and set aside.
In a large bowl beat cream cheese and butter with an electric mixer on medium speed until combined.  Gradually add sugar, beating about 7 minutes or until light.  Add eggs, one at a time, beating 1 minute after each; scrape bowl frequently.  In a bowl combine bananas, milk and vanilla.  Alternately add flour mixture and banana mixture to butter mixture; beat on low to medium speed after each addition just until combined.  Stir in pecans and then spread evenly in pan.  Bake for about 60-80 minutes or until a toothpick inserted near the center comes out clean.  Cool cake in pan on a wire rack for about 10 minutes.  Remove from pan; cool on rack.  Sprinkle with powdered sugar.  Serves 12.

Breakfast sweet breads and muffins or scones are just part of a full gourmet breakfast that you receive when you choose accommodations at The Firelight Inn on Oregon Creek Bed and Breakfast.  Our specialty is delivering your full breakfast to your suite each morning where it can be enjoyed in privacy by the firelight.  We would love the chance to cook breakfast for you!

New Adventures During Your Firelight Inn Stay in Duluth MN

The Innkeepers had some time this afternoon to visit a couple new businesses in Duluth, Minnesota that we think our guests will enjoy during their stay at The Firelight Inn on Oregon Creek Bed and Breakfast. We drove to the Fitger’s Brewery Complex and visited the new Duluth Kitchen Store. What a treat and it’s just what Duluth needed! Everything you can use in your kitchen along with cookbooks, aprons, linens, knives and more. The Duluth Kitchen Store in the Fitger's Brewery Complex in Duluth MNJust across the hall is the Kitchen Store’s Marketplace Shop with yummy chocolates, dips, mustards, vinegars and sauces. They have lots of samples to taste and the gals working there were so very helpful. We picked up a special butterscotch rum sauce to give as a gift to a special son!The new Marketplace store in Fitger's Brewery Complex

After shopping through the other delightful shops in the complex and picking up a couple more copper birds for the Firelight front porch, we drove to our new favorite ice cream shop. The Chocolate Shop Ice Cream shop is at 17th and London Road–just minutes from the Inn.

So many choices to put ice cream in

This award winning ice cream is made in Wisconsin by a family owned company. There are so many flavors of ice cream that it’s really difficult to choose. They also offer an extra “cow tail” on top of any flavor that you would like to try. What a treat in a dish or cookie dish or chocolate covered waffle cone or sugar cone–oh, the choices are many. They will be open for the season through Halloween so plan your ice cream fix soon!

Tripadvisor Certificate of Excellence

Innkeepers Jim and Joy Fischer were pleasantly surprised when they opened the mail a couple of weeks ago to find a “CERTIFICATE of EXCELLENCE FOR 2012″ for The Firelight Inn on Oregon Creek Bed and Breakfast in Duluth, MN by Tripadvisor. As we strive everyday to make an excellent stay for our guests it’s nice to get recognized for our hard work. We hope you will consider a stay soon here at The Firelight Inn and enjoy our great accommodations!

On a more serious note the Inn and neighborhood are virtually unscathed from all of the recent rains and flooding. Guests are enjoying Duluth and the North Shore and have made comments that if they had not seen all of the media reports they would have never known that Duluth had such a terrible couple of days. Lake Superior is trying to clear itself from all of the silt and debris poured into the big lake through all of the streams, creeks and rivers. Come to Duluth this summer–you will be surprised how great it looks! We hope you have a great summer and we hope to see you on your next trip to Duluth!

Firelight Inn Lemon Poppyseed Muffin Tops Breakfast Recipe

This morning at The Firelight Inn on Oregon Creek Duluth Bed and Breakfast we served our guests blueberry croissant puffs, sausage links, fresh fruit with firelight granola, lemon poppyseed muffin tops, pumpkin bread, orange juice and coffee. All this in a big basket that was delivered to their suite by Innkeeper Jim. They are enjoying breakfast this rainy morning by the firelight!

After glancing through a favorite recipe book last evening, we found a recipe for muffin tops. They are like eating the best part of a muffin–the sweetened top–and almost like a cookie. We want to share this great recipe!

Lemon Poppyseed Muffin Tops

3/4 cup flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon poppy seed
1/4 teaspoon salt
1/4 teaspoon cinnamon
2 teaspoons grated lemon peel
3 tablespoons shortening
1/3 cup milk
1 teaspoon lemon juice

Heat oven to 375 degrees. In a medium bowl, combine flour, sugar, baking powder, poppyseed, salt, cinnamon and lemon peel. With pastry blender, cut in shortening until mixture is crumbly.

Add milk and lemon juice, stir just enough until dry ingredients are moistened. Drop dough by heaping tablespoons onto silpat mat on cookie sheet.

Combine some sugar in the raw with a little cinnamon and sprinkle on tops of dough. Baked 12 minutes at 375 degrees or until light golden brown. Serve warm. Makes 8 muffin tops.

We would love the opportunity to prepare and deliver breakfast to you when you stay with us in Duluth, Minnesota. See you soon!

The Magical Celebration Package at The Firelight Inn Duluth Bed and Breakfast

We prepared a Celebration Package for the couple checking into our Northwoods Suite last Friday. Chilled champagne with two souvenir champagne flutes and a fruit, cheese and cracker platter were awaiting the couple who arrived from Mankato for a weekend getaway at The Firelight Inn Duluth Bed and Breakfast. We want to share the latest news from the Northwoods Suite guest journal.

“*The Weekend of March 2-4th 2012*

Jim and Joy,

Thank you so much for everything. My boyfriend booked this weekend at The Firelight Inn because he knew I wanted to have a relaxing weekend together away from the hussle and bussle of school (for me) and work. We had been looking forward to the weekend away for months. This place could not be more perfect for the two of us. The Northwoods Suite is exactly what the two of us love about MN…the Outdoors/Up North feel.

I am very happy to announce that we are now ENGAGED! The Firelight Inn and Northwoods Suite will forever be our special place. He completely got me and I am still so shocked but we are both extremely happy. He ordered your “Celebration Package” and used this as his decoy. He asked me to take a look at it (because naturally I was so excited looking at everything and settling in for the weekend). He said, “I ordered this for us because we are celebrating. I love you and I want to marry you.” He got down on his knee and said ‘will you marry me?’ while pulling out the most beautiful ring from his pocket! After a moment or two of screaming and jumping around (while saying are you serious over and over) I said YES, OF COURSE!

This is everything we could hope for and more. We are so excited that this wonderful, relaxing, peaceful, historical and exquisite bed and breakfast has been a part of our next chapter together. We will definitely be coming back sooner than later and recommending to others.

THANKS AGAIN FOR EVERYTHING!

N&J, Mankato, MN (the newly engaged love-birds)

P.S. Breakfast was amazing! We also highly recommend the massages…great job Lynn!”

So there you have it–order a celebration package with your next stay at The Firelight Inn Bed and Breakfast and let the magic begin! Congratulations to the special couple on their upcoming marriage!
